A recipe that calls for only the Lucky Charms Marshmallows?! How could I resist? Since I was little, I’ve been picking them out of the cereal box–much to the annoyance of my brother. And while I’ve tried to curb that habit, sometimes those tiny colorful sugar clouds still get the best of me. I didn’t think they could get any better, but cover them in white chocolate and pair them with some pretzels, and you have a amazing blend of sweet and salty.
It was just the kind of snack I needed for a friend’s baby shower. Here’s what you’ll need:
1 1lb. box Lucky Charms
1 1lb. bag pretzel sticks
8oz. baker’s white chocolate
1 cup mini M&Ms
2 tbsps. rainbow pearl sprinkles
⅓ cup pink candy melts
⅓ cup yellow candy melts
First comes the most tedious part–separating the marshmallows from the cereal bits. If you happen to have a kiddo around, they’d probably love to help you do this.
Then melt the white chocolate and pour over the pretzels. Mix until all pretzels are covered. Then add marshmallows and M&Ms. Mix gently.
Pour mixture onto a large cookie sheet or counter space covered with parchment paper. Spread it out til it’s in a thin layer (maybe 2 inches or so thick).
Sprinkle sprinkles. Melt your candy melts and use a pastry bag or a ziplock with corner cut off and drizzle. Repeat if you’re using multiple colors of candy melts.
Let sit for about 20 minutes or until white chocolate has hardened. If you’re trying to get this done quickly, stick the tray in the fridge for 10 minutes.
You’re almost done! Just break up the mix into a large bowl and serve! You can even put it into clear plastic cups for a party like I did 🙂
