With our cruise coming up, Boyfriend and I have been trying to eat healthier. Most of you know that’s way easier said than done–especially when Breyer’s Mint Chocolate Chip ice cream loves to seduce me with its deliciousness. Anyway, he’s been trying to stick to a low-carb diet, but that’s made coming up with snacks a problem. Sure, he’s eaten a lot of nuts and salami, but after a few months he was craving something new. So I decided to combine two of his favorites–cheese and peppers–and came up with Mozzarella Pepper Poppers.
Best of all, they only take 3 ingredients and they’re done in 20 minutes. All you need are a bag of sweet peppers and string cheese, but I added in a little salt and pepper.
First, unwrap 10 of the string cheese sticks and cut them in half. Then wash your peppers and make a vertical slice down one side. I tried to cut along the more pointed side of the pepper so it could lay flat in the dish. Scrape the seeds out of the peppers and stuff one piece of string cheese inside.
If some of the peppers are too small, you can cut the cheese and stuff the extra piece inside a bigger pepper. At the end, they should look like this:
Sprinkle a little salt and pepper on top. Then put them into the oven on a high broil for 10 minutes.
And, ta da! Here you have a yummy low carb snack or fun game-day appetizer.
Ingredients
- 1 lb. Sweet Peppers
- 1 bag string cheese (I used Sargento)
- Pepper & Salt
Instructions
- Cut string cheese in half.
- Wash then slice the peppers down one side. Be careful not to cut them all the way through!
- Remove seeds.
- Stuff string cheese into peppers.
- Salt and pepper to taste.
- Broil on high for ~10 minutes, until peppers begin to brown.
